If you have leftover boiled or mashed potatoes, they are ideal for quick and crispy fritters.
Required ingredients
- mashed potatoes
- grated cheese
- wholemeal or wholemeal flour
- chopped spring onion
- eggs
- garlic powder
- dried parsley
- dried thyme
- salt and pepper
- oil
- sour cream – for serving
How to prepare them
Place the mashed potatoes in a large bowl (it is best to let them sit at room temperature for 30 minutes before mixing). Add the grated cheese, flour, chopped spring onions, ham, eggs and seasonings to taste. Mix everything well until you have a smooth, cohesive mixture.
Shape the pancakes, then heat a pan with a little oil and fry the pancakes in batches, about 5 minutes on each side, until golden brown. Serve warm, with sour cream, a little more cheese and chopped spring onions.
